Recipe from "A Proper Newe Booke of Cokerye" by Duke Cariadoc of the Bow and Duchessa Diana Alena.
Pie Crust: Mix and knead together the following ingredients.
- 1 cup of flour (I used einkorn flour)
- 2 egg yolks
- 1/3 cup of butter
- 2 to 2 and a half tablespoons of water

Garlic Torte filling:
- 8 ounces of ricotta cheese
- 8 ounces of farmers cheese or queso fresco (+ tablespoon heavy cream)
- 3 large eggs
- 1/4 cup butter
- 1 pound of garlic
Variations: Add saffron, other spices to taste, and raisins. Bake 45 to 60 minutes at 400 degrees, 205 Celsius.
