In this episode, I sit down with Tim and Erik, two ramen heads who both work at ramen shops here in the US. Tim who is much better known online as Hella ramen works at Neighborhood ramen a craft ramen shop in Philadelphia Pennsylvania, and Erik Chiodo works at Yume wo katare, a Jiro-inspired ramen shop in Cambridge Massachusetts that also has locations throughout Japan as well. Both of these guys are very passionate about making ramen and though originally I thought it might be fun to talk about the experiences of working in these shops, our conversation naturally drifted into standard ramen nerd talk about making ramen, theories of ramen, what's great about ramen. I had a blast and was very inspired to make some ramen after recording this one so without further ado here is Hella Ramen and Chiodo on the way of ramen podcast.
