Carol Jackson was a very successful well respected Programme Director within Financial services for over 25 years.
She decided she want to create her own brand in 2016 and this resulted in ELJ Drinks being borne. Carol launched a range of RTD gin cocktails in 2017 – long before they became popular and then moved to launch the award winning Ellis Gin in October 2018.
The company was flourishing in early 2020. When Covid came along Carol showed her
resilience by quickly pivoting the business.
She showed her compassionate side by running Virtual Gin experiences with local charities –
keeping people social whilst also raising much need funds for charities during.
Carol also ran a successful Crowdfunder to pre-launch Lemon gin – pre-selling the first
batch, and donated 10% of all funds raised to NHS Together charity.
All this whilst also volunteering to ensure vulnerable people had prescriptions and shopping.
Carol was recognized on the top 100 F-Entrepreneur list in 2021. As a celebration of this
Carol was invited for afternoon tea at the House of Lords.
Since Covid ELJ Drinks has won numerous awards and been shortlisted for many more.
And now has Ellis listed in over 50 independent shops, bars and restaurants including The Ivy.
Recently ELJ Drinks were included in the Prestige Hall of Fame as a result of winning
Gin producer of the year, 3 years in a row.
In May 24 – Carol diversified from the 5 gins in the range to create the brands first rum.
Recognising the popularity of Rum – she has created A Honey Spiced Rum, a blend of
Caribbean and Scottish Rum which is then sweetened with honey that is cultivated in the Ellis Honey Bee Hotel – specifically for the Rum.
The branding has also been created to catch the eye of the target audience recognising the number of females who are now loving Rum.
