Have you heard of or tasted Horchata? It's a refreshing drink, to enjoy hot or cold, and one of our Journey participants aims to make its traditional process in Spain a more sustainable and to lower emissions this way.
Maria Alegría Serna (Bologna-Trento-Zürich) from Colombia came to Europe with the goal to gain more knowledge about the complexity of the food systems as well as about sustainable innovations that she can bring back home to reduce food waste. In Valencia, Maria learns about the power of collaboration and good communication between the industry and local farmes, something that she is missing in Colombia. Food has always been special for her family and Maria is enlightened by the community that can be created around food, e.g. through growing your own food within urban areas and share it with your neighborhood.
